Chicken Meatballs

What you’ll need:

1lb ground chicken breast

1 cup baby spinach, chopped

2 teaspoons dried basil

2 teaspoons dried chives

2 teaspoons dried parsley

¼ cup walnuts or oats

½ tsp kosher salt

¼ tsp black pepper

Instructions:

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Grind walnuts or oats in a food processor to create a fine powder.
  • In a bowl, combine ground chicken, spinach, fresh herbs, ground walnut or oat powder, salt, and pepper.
  • Form the meatballs into golf ball sized balls and place on baking sheet.
  • Bake for 15-20 minutes or until golden brown.

Note:

Serve with pasta or serve on a bed of greens.
