Lately, we’ve been talking with our clients about making time for a filling, nourishing breakfast, even on busy mornings. We know that you all know the importance of a balanced breakfast, so we’re going to dive into 4 simple options that are easily transportable for on-the-go mornings.

Pancake Roll-Ups

 

Make our cottage cheese pancakes (the morning of or the night before, whatever works best for you!), top them with nut butter, and wrap individually. Add fruit of your choice and pop them in the toaster in the morning. So easy, and packed with a nice balance of protein, carbs, and healthy fats.  

Cottage Cheese Bowl

 

Add cottage cheese, fruit, granola, and nut butter into a jar, and voila! You have a balanced breakfast (that is perfect for the heat). This can easily be made with Greek Yogurt too, but we’re cottage cheese apologists here at the Mindful Eating Dietitian!

Breakfast Burrito

 

Breakfast burritos are truly one of our favorite meals around here; they are so customizable: you can get creative, or you can keep it super simple. Our go-to recommendation? Add eggs, chicken sausage, potatoes, and avocado to a tortilla, wrap it up, and take it with you! This is another option that is super easy to make the night before and warm up. 

“Snack Break” Breakfast

 

This one is so fun; combine trail mix, chopped berries, and two of our flourless protein cookies in a small bowl. This is perfect for those of you who wake up with a sweet tooth, as well as people who may not have a huge appetite in the morning. You can eat this throughout the morning at your desk, instead of feeling like you need to stuff yourself before getting to work.
