Super Crispy + Flavorful Mexican-Inspired Seared Tofu
Lately, I have had a lot of fun experimenting with plant-based dishes, and I absolutely love this recipe. It’s the product of a combination of a few of my go-to recipes. If tofu isn’t your thing, simply sub for cooked chicken or turkey; this works well for both (trust me, I’ve tried it all!)
I have really been loving this sprouted tofu from Trader Joe’s; I honestly had no idea what ‘sprouted tofu’ meant, but, it turns out, that sprouted tofu is super healthful. Sprouted tofu simply means that the soybeans were drained + soaked before being packed into tofu. This results in increased nutrient content (more protein, calcium, and iron) + improved digestibility! So, check out sprouted tofu if you haven’t had it before!!
Also, I love how adaptable this recipe is. You can add the tofu (or whatever protein you use) to sandwiches, salads, bowls, soups. Let us know what you think of this recipe (and if you have any suggestions for experimenting with it!)

Mexican-Inspired Seared Tofu
Ingredients
- 1 block tofu
- 1/3 - 1/2 cup salsa
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp soy sauce
- 1/2 tsp cumin
- 2 cups cooked veggies
Instructions
- Chop tofu into desired shapes and sizes.
- Combine salsa, olive oil, lime juice, soy sauce, and cumin in bowl, mix well, add tofu, let sit for 15 minutes.
- Heat add tofu to lightly greased pan over medium-high heat, sear for 4 - 5 minutes per side.
- Add to cooked veggies and enjoy!
