Chocolate Energy Balls
How can I properly express how incredible these chocolate energy balls are? Simply put: it isn’t possible. This recipe produces the perfect combination of sweet, rich, and savory. So, you can have dessert at any time of the day, and be confident that you are fueling your body.
My favorite version of this recipe is the original. However, it also tastes incredible with added fruit! We have tried dried cherries, blueberries, and strawberries, and they all pair quite well with the cacao.
Okay, let’s talk texture. The nut butter allows for a creamy, smooth feel, while also maintaining the rich taste of the cacao and maple syrup. The lemon juice and cinnamon also allow for a bright and warm taste, without being too, too sweet.
Honey also goes well with this recipe as a substitute for maple syrup. I also like cashew butter as a substitute for almond butter. Both offer a slightly more nutty taste, so depending on your audience, that might be the way to go!
All in all, this is an easy, versatile recipe. Be warned, though, if you are making these for a large group of people, they often go QUICK. I have made them for morning snack breaks, events, and post-workout refuel. Chocolate Energy Balls
Ingredients
- 1 1/4 cup oats
- 6 tbsp ground flax
- 2 tsp ground cinnamon
- 1/2 cup almond butter
- 1/2 cup maple syrup
- 1/4 cup cacao powder
- 2 tsp lemon juice
- 1/4 tsp almond extract
- 3 tsp salt adjust to taste
Instructions
- Add oats, flax, cinnamon to large bowl, mix well.
- Add almond butter, maple syrup, vanilla, salt, mix well.
- Slowly add the rest of the ingredients.
- Portion into 2 tbsp balls and chill for 60 - 120 minutes.
