Super Savory Eggpant Chips

Okay, I’ll be honest – eggplants have never been my favorite vegetable. I didn’t understand the hype… until these chips entered my life. This is my own personal spin on a few different recipes I’ve seen floating around. And, let me tell you, it’s GOOD.



These are perfect for an afternoon snack, side at dinner, or on top of a lunch salad. They’re savory, crispy, and have an incredibly unique, earthy taste that makes them unforgettable. 

I personally like to pair these eggplant chips with a sandwich; I also know a few people who like to use this recipe as a go-to for large potluck events. They also work SO well in salads with sun-dried tomatoes.

 

The best part about this recipe is how creative you can be – feel free to experiment with adding different cheeses and seasonings. I have used Everything but the Bagel, and it worked SO well.

Savory Eggplant Chips

Ingredients
  

  • 1 large eggplant chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder adjust as desired

Instructions
 

  • Preheat oven to 330
  • Chop eggplant into thin oval shapes
  • Mix all other ingredients in small bowl, dip each eggplant oval in
  • Lie eggplant ovals on nonstick pan, drizzle remaining olive oil/lemon juice mixture on ovals
  • Bake for 25 minutes, flipping halfway through
  • Let cool for 5 minutes & enjoy!

Notes

Best enjoyed within 2 days. Pairs perfect with sandwiches or on top of salads.
Experiment with adding cheese and other seasonings. 'Everything but the bagel' seasoning works well too.
