Delicious Purple Ube Pancakes
If you’re like me, you look forward to your Saturday morning breakfast all week!
Truthfully, there’s nothing I love more than a warm, yummy, slow weekend morning. Well, there might be one thing I love more than that….a sweet breakfast! And this, my friend, is the perfect recipe for a sweet, protein-packed breakfast.
Not only are these pancakes a super fun color, but they’re simple, filling, and will help you hit your morning protein goals with extreme ease.
I like to pair them with some eggs and bacon, but they’re absolutely perfect on their own! Make sure to tag us on Instagram if you try them – we love seeing your creations!

Ube Pancakes
Course Breakfast
Ingredients
- 1 cup ube halaya
- 1/2 cup yogurt unflavored
- 4 tbsp oat milk
- 3/4 cup rice flour or any flour of your choosing
- 1 tsp baking soda
- 1 tsp vanilla
- 2 tbsp maple syrup more for topping
Instructions
- Mix ube halaya, yogurt, oat milk, vanilla.
- Slowly add flour, baking soda, vanilla, maple syrup.
- Add 1/4 cup of batter to heated pan at a time. Flip batter when bubbles start to form and bake for 1 - 2 minutes on second side.
- Add more maple syrup for topping. Pair with fruit and eggs if desired. Enjoy!
Notes
We suggest rice flour and oat milk, but any flour or milk will work.
