When it comes to cookies, I don’t mess around. I want the softest, most satisfying and flavorful cookie possible. Rest assured; these turtle cookie bars hit the spot.
Not only are they the perfect combination of salty and sweet, but they’re also perfect for any celebration – birthdays, wedding showers, graduations, a random weekend. They’re also free of most allergens, so they are super accommodating + accessible. You can easily replace the pecans with extra caramel chips.
On that note, you can really replace any of the fun additions (pecans, caramel chips, chocolate chips) with whatever you want. Think: kitchen sink cookie. Full creative mode ON.

Turtle Cookie Bars
Ingredients
- 2 tbsp flaxseed
- 4 tbsp water
- 2 1/4 c flour
- 3 tsp baking powder
- 1 tsp corn starch
- 2 tsp salt
- 3/4 cup coconut oil melted
- 1 2/3 cup light brown sugar
- 1 tbsp vanilla
- 1/3 cup pecans chopped
- 1 cup chocolate chips
- 3/4 cup caramel chips
Instructions
- Mix flaxseed with water, this will be your 'flaxseed egg'.
- Preheat oven to 350 F.
- Mix flour, baking powder, corn starch, salt.
- In a different bowl, mix coconut oil and sugar. Add flaxseed egg, vanilla.
- Pour dry ingredients into wet, mix well, add pecans, chocolate chips, and caramel chips.
- Transfer to 8x8 baking dish. Bake for 20 - 25 minutes. Let cool for 15.
