Ultimate Summer Salad
This is the perfect protein-packed, well-balanced salad to fuel for hot Summer days!
Course Dinner, lunch
Ingredients
- 1 lemon
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 tsp black pepper
- 1 cup quinoa cooked
- 1/2 cup chicken chopped
- 1/2 can black beans drained and rinsed
- 1 red pepper chopped
- 1/2 cup carrots sliced
- 1/2 cup broccoli chopped
- 1/2 cup brussel sprouts chopped
- 1/2 cup green beans cooked
- 1/2 cup feta cheese
Instructions
- Mix lemon juice and zest with salt, pepper, olive oil. Adjust to taste. This is your dressing.
- Add quinoa and chicken to dressing mixture. Stir well.
- Slowly add black beans, bell pepper, carrots, broccoli, brussel sprouts, green beans. Mix well.
- Add feta. Add seasonings to taste.
- Enjoy!
Notes
Option to sub black beans for chicken or tofu - or to simply add chicken or tofu.
