Super Refreshing Summer Salad!

Knowing that I have a yummy, exciting lunch packed gets me through busy, stressful mornings. This refreshing, filling salad is often the highlight of my day.

 

Truthfully, though, I used to have such an issue with not wanting to eat the work lunch I packed – I would make something the night before work, and then I would order delivery or run to the nearest café when it lunchtime actually rolled around.

 

It wasn’t great for my wallet or my time. This salad, however, I want to eat every single time.

 

The flavorful lemon + olive oil pair so well with the quinoa and chicken. The beans, broccoli, and feta make it so fun and satisfying. This is also meal prep friendly – if you’re short on time, you don’t have to skimp on everything that makes this salad amazing!

 

Feel free to play around with the protein – add turkey, beef, or tofu instead of chicken. Maybe add some pinto beans instead of black beans, or skip the green beans and add cucumbers instead.

 

Figure out what combination of vegetables and proteins calls to you, and run with it.  

Ultimate Summer Salad

This is the perfect protein-packed, well-balanced salad to fuel for hot Summer days!
Course Dinner, lunch

Ingredients
  

  • 1 lemon
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/4 tsp black pepper
  • 1 cup quinoa cooked
  • 1/2 cup chicken chopped
  • 1/2 can black beans drained and rinsed
  • 1 red pepper chopped
  • 1/2 cup carrots sliced
  • 1/2 cup broccoli chopped
  • 1/2 cup brussel sprouts chopped
  • 1/2 cup green beans cooked
  • 1/2 cup feta cheese

Instructions
 

  • Mix lemon juice and zest with salt, pepper, olive oil. Adjust to taste. This is your dressing.
  • Add quinoa and chicken to dressing mixture. Stir well.
  • Slowly add black beans, bell pepper, carrots, broccoli, brussel sprouts, green beans. Mix well.
  • Add feta. Add seasonings to taste.
  • Enjoy!

Notes

Option to sub black beans for chicken or tofu - or to simply add chicken or tofu.
