Cozy Nostalgic Cottage Cheese Pancakes

Ingredients
- 1 cup flour gluten-free if desired
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 cups cottage cheese
- 4 eggs
- 2 ripe bananas
- 2 tsp vanilla
Instructions
- Mix flour, baking powder, cinnamon in large bowl.
- In a different bowl, mix cottage cheese, eggs, bananas, and vanilla.
- Add second bowl to first, mix well.
- Using 1 - 2 tbsps of batter at a time, cook for three to four minutes at medium-heat.
Notes
Serves 2-3 people. Option to sub yogurt for the cottage cheese.
