Cozy Cottage Cheese Pancakes

Okay… I don’t even know where to begin when describing these cottage cheese pancakes. They’re like being wrapped up in a warm hug, or getting into a hot tub on a cold day, or simply experiencing the best wave of nostalgia ever…

 

The cinnamon, banana, and vanilla combination creates an indescribable taste – think the best vanilla cupcake you’ve ever had. The cottage cheese (in addition to adding some solid protein) gives these babies an incredibly fluffy and light texture that MELTS IN YOUR MOUTH.

 

Honestly, it’s so quick + easy to whip these up that they don’t have to be regulated to the weekends. Maybe your Tuesday mornings just got a huge glow up?

 

If you aren’t the biggest fan of cottage cheese, Greek yogurt is an absolutely fantastic substitute. I like to pair these with eggs and strawberries, and sometimes bacon too. Let us know on Instagram what you decided to pair them with!

Cozy Nostalgic Cottage Cheese Pancakes

Perfect high protein breakfast!

Ingredients
  

  • 1 cup flour gluten-free if desired
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 2 cups cottage cheese
  • 4 eggs
  • 2 ripe bananas
  • 2 tsp vanilla

Instructions
 

  • Mix flour, baking powder, cinnamon in large bowl.
  • In a different bowl, mix cottage cheese, eggs, bananas, and vanilla.
  • Add second bowl to first, mix well.
  • Using 1 - 2 tbsps of batter at a time, cook for three to four minutes at medium-heat.

Notes

Serves 2-3 people. Option to sub yogurt for the cottage cheese.
