Cozy Black Bean Stew

This stew is the perfect end to a chilly day. It’s cozy and comforting, while also nourishing and satisfying. The tomato sauce, black beans, and vegetable mix create an incredibly savory taste. 

 

Not only does this taste absolutely amazing, but it’s also so, so, so easy, and so quick (think: less than 30 minutes). Also, it’s easily modified for picky eaters and allergies, and can be served as side dish or a main meal. There’s nothing I love more than a versatile dish!!

 

Feel free to experiment with the vegetables and protein that you add. Chicken, turkey, and tofu are all great additions; I also love to substitute pinto beans for black beans. This stew pairs well with a warm piece of sourdough bread as well.

Cozy Black Bean Stew

Ingredients
  

  • 2 tbsp olive oil
  • 1/4 cup red peppers chopped
  • 1 onion diced
  • 1/4 cup carrots chopped
  • 2 garlic cloves chopped
  • 1/4 tsp coriander
  • 2 cups tomato sauce
  • 1/2 tsp basil
  • 1 tsp salt
  • 2 1/2 tsp paprika
  • 1 tsp cumin
  • 2 cups vegetable stock
  • 2 cans black beans cooked
  • 1 handful kale

Instructions
 

  • Heat olive oil, peppers, onion, carrots until soft. Add garlic, coriander.
  • Add tomato sauce, basil, salt, paprika, cumin. Let sit for 10 minutes.
  • Add vegetable stock, black beans. Taste, add salt and seasonings if needed for taste preference. Let sit for 10 minutes.
  • Top with kale and/or greens of choice.
