Cozy Black Bean Stew
Ingredients
- 2 tbsp olive oil
- 1/4 cup red peppers chopped
- 1 onion diced
- 1/4 cup carrots chopped
- 2 garlic cloves chopped
- 1/4 tsp coriander
- 2 cups tomato sauce
- 1/2 tsp basil
- 1 tsp salt
- 2 1/2 tsp paprika
- 1 tsp cumin
- 2 cups vegetable stock
- 2 cans black beans cooked
- 1 handful kale
Instructions
- Heat olive oil, peppers, onion, carrots until soft. Add garlic, coriander.
- Add tomato sauce, basil, salt, paprika, cumin. Let sit for 10 minutes.
- Add vegetable stock, black beans. Taste, add salt and seasonings if needed for taste preference. Let sit for 10 minutes.
- Top with kale and/or greens of choice.
