Chicken Curry

Ingredients
  

  • 1 cup frozen vegetables
  • 1 tbsp olive oil
  • 2 1/2 cups chicken or tofu chopped
  • 1 can coconut milk
  • 1 tbsp curry powder
  • 2 tbsp curry paste
  • 1 tbsp turmeric
  • 2 tbsp peanut butter
  • 2 tsp salt and pepper adjust to preference

Instructions
 

  • Heat frozen vegetables in large skillet.
  • Add all ingredients to the skillet.
  • Cover and cook for 15-20 minutes.

Notes

Tofu or chickpeas can be subbed for chicken. Serve with pita bread or rice.
