Chunky Chocolate Chip Cookies
If you’re looking for the recipe for a perfect, fluffy, gooey cookie – you’re in the right place! These cookies are chunky and dreamy. The coconut oil creates the perfect texture + tenderness, and the maple syrup-coconut sugar combination results in an indescribably amazing flavor.
I was first introduced to these cookies at a Galentines event in 2022, and it’s been my go-to recipe since. If you elect to use vegan chocolate chips, then it’s suitable for vegans. If you elect to use gluten-free flour, then it’s suitable for gluten-free diets! I’ve made it both with gluten-free and non-gluten-free flour, and they both work wonderfully.

Chunky Chocolate Chip Cookies
Ingredients
- 1/2 cup coconut oil
- 1/3 cup coconut sugar
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 tbsp ground flaxseed
- 1/4 tsp salt
- 1 1/2 - 2 cups all-purpose flour gluten-free, if desired
- 1 1/2 cups chocolate chips
- 1 1/2 tbsp water
- 1 tsp baking powder
Instructions
- Mix 1 tbsp ground flaxseed with 1 1/2 tbsp of water, let sit five minutes. This is your flaxseed egg!
- Mix coconut oil, coconut sugar, honey. Add flaxseed egg, vanilla.
- Add baking powder, salt. Slowly add flour until dough begins to form. You may not need to add 2 cups. Add chocolate chips once satisfied with dough.
- Chill dough for 2-3 hours.
- Preheat oven to 250 F.
- Form tbsp sized balls of dough, add to lined cookie sheet, bake for 12 - 15 minutes.
- Let cool for at least 10 minutes and enjoy!
