Chunky Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup coconut oil
  • 1/3 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 tbsp ground flaxseed
  • 1/4 tsp salt
  • 1 1/2 - 2 cups all-purpose flour gluten-free, if desired
  • 1 1/2 cups chocolate chips
  • 1 1/2 tbsp water
  • 1 tsp baking powder

Instructions
 

  • Mix 1 tbsp ground flaxseed with 1 1/2 tbsp of water, let sit five minutes. This is your flaxseed egg!
  • Mix coconut oil, coconut sugar, honey. Add flaxseed egg, vanilla.
  • Add baking powder, salt. Slowly add flour until dough begins to form. You may not need to add 2 cups. Add chocolate chips once satisfied with dough.
  • Chill dough for 2-3 hours.
  • Preheat oven to 250 F.
  • Form tbsp sized balls of dough, add to lined cookie sheet, bake for 12 - 15 minutes.
  • Let cool for at least 10 minutes and enjoy!
