Nourishing + Refreshing Chickpea Salad

Okay, let’s talk chickpeas. Actually, let’s talk chickpeas, feta cheese, and veggies topped with the perfect dressing. May I present… this recipe?! The lemon, olive oil, and red wine vinegar pair so well together, and highlight the chickpeas and veggies in a smooth and wonderful way.


This salad is refreshing, nourishing, and tastes absolutely amazing. It’s my go-to lunch for warm Spring and Summer days, especially when I’m running low on time.


Feel free to experience with the add-ins – sometimes I include avocado, spinach, olives, and/or chopped peppers and leave out the cucumbers. I’ve also experimented with adding chicken, hard-boiled eggs, and black and pinto beans, but I never leave out the chickpeas!


I find it can be hard to build a salad that is actually filling, but this has an incredible balance of protein, healthy fats, and carbs to work as a supplement to a meal or function on its own.

Chickpea Salad

Enjoy this refreshing and easy to make chickpea salad. Great for summertime lunches and for a grab and go meal. This salad has everything you need to feel full and satisfied!

Ingredients
  

Salad

  • 1/2 fresh lemon
  • 2 cups grape tomatoes sliced
  • 2 cups cucumber diced
  • 1 can chickpeas drained
  • 4 oz feta cheese
  • 1/2 cup parsley chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp cumin
  • salt & pepper to taste

Instructions
 

  • Mix all salad ingredients in a large bowl
  • Mix all dressing ingredients in a small bowl
  • Combine salad and dressing, toss and enjoy!
