Chickpea Salad

Enjoy this refreshing and easy to make chickpea salad. Great for summertime lunches and for a grab and go meal. This salad has everything you need to feel full and satisfied!

  • 1/2 fresh lemon
  • 2 cups grape tomatoes sliced
  • 2 cups cucumber diced
  • 1 can chickpeas drained
  • 4 oz feta cheese
  • 1/2 cup parsley chopped


  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp cumin
  • salt & pepper to taste


  • Mix all salad ingredients in a large bowl
  • Mix all dressing ingredients in a small bowl
  • Combine salad and dressing, toss and enjoy!
