Leftovers Salad Idea
This is just one example of how you can transform boring leftovers into something new and interesting! In this salad, I added some flavored tofu, sausage, and sweet potato that I had leftover from cooking earlier in the week. Not only did I create an entirely new meal using ingredients I already had prepared, but I created something nourishing and balanced. Ingredients
- leftover seasoned tofu cubed (heated in microwave, oven, or air fryer)
- leftover sausage sliced (heated in microwave, oven, or air fryer)
- leftover sweet potato sliced (heated in microwave, oven, or air fryer)
- 1/2 avocado sliced
- leafy green of choice (I used spring mix)
- 1/2 tbsp balsamic vinegar
- 1/2 tbsp olive oil
- salt and pepper to taste
Instructions
- Reheat leftovers using desired method.
- In serving bowl, mix together balsamic vinegar, olive oil, salt, and pepper. Add lettuce and toss to combine.
- To dressed greens, add sliced avocado and reheated leftovers. Enjoy!
