Throw-Together Meal Idea
This is an example of a meal I make regularly throughout the week! Sometimes I will use a different protein source instead of tempeh, a different leafy green instead of kale, or random leftovers I have on-hand... it depends on what is in my fridge and what sounds good to me in that moment. May this throw-together meal inspire you to get creative, utilize what's in your fridge/pantry, and try new flavor combinations!

Ingredients
- 1/2 block tempeh sliced (try the Crispy Air Fryer Tempeh recipe on my website!)
- 2 cups kale roughly chopped (can sub other leafy green of choice)
- 1/2 cup shredded slaw mix
- 1/2 avocado sliced
- 2 tbsp hummus
- 1 tbsp sunflower seeds
- 1 tbsp lemon juice
- 1 tbsp olive oil
- salt and pepper to taste
- sprinkle sesame seeds
Instructions
- Prepare, cook, and season tempeh to liking. (Check out the Crispy Air Fryer Tempeh recipe on my website for some inspiration!)
- In large bowl, combine chopped kale, slaw, lemon juice, olive oil, salt and pepper. Mix with tongs or massage with clean hands.
- In serving bowl, add dressed kale/slaw, prepared tempeh, avocado, hummus, sunflower seeds, and sesame seeds. Enjoy!
