Chimichurri Sauce
Chimichurri is a rich green sauce made from herbs, olive oil, and vinegar. It can be used as a delicious marinade for proteins or as a condiment on top of grilled meats, fish, tofu, tempeh, cooked veggies, rice, tacos, and my favorite... burgers!

Equipment
- Food processor (can use blender - just pulse)
- 1 Small bowl
Ingredients
- 1/2 cup fresh parsley chopped
- 4 cloves garlic chopped
- 1 shallot chopped
- 1 tsp dried oregano
- 2 tsp red pepper flakes
- 3 tbsp red wine vinegar
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2/3 cup olive oil
Instructions
- To food processor, add chopped parsley, chopped garlic, chopped shallot, oregano, red pepper flakes, red wine vinegar, salt, and pepper. Process until ingredients are finely minced, but not a paste.
- In small bowl, combine mixture with olive oil. Stir to incorporate.
- Let sit for at least 15 minutes for flavors to develop. Serve and enjoy!
