  • Toaster or oven
  • 1 Pan


  • 2 slices bread of choice
  • 1/2 avocado roughly mashed
  • 2 eggs (can sub tofu scramble or tempeh if vegan!)
  • 1 tbsp butter or oil
  • salt and pepper to taste

Topping Ideas:

  • handful cherry tomatoes sliced
  • drizzle sriracha, salsa, or hot sauce
  • sprinkle shredded cheese


  • Toast bread to desired level of doneness.
  • In pan over medium heat, cook eggs to desired doneness/style (scrambled, over-easy, sunny side up, etc.).
  • Top toast with mashed avocado, eggs, and desired toppings.
  • Serve and enjoy!
