Ingredients
- tortilla chips of choice
- cheese of choice
- black beans rinsed and drained
- kale chopped
- tempeh chopped
- corn frozen or fresh
- taco seasoning
- salsa
- guacamole
Instructions
- Preheat oven to 350 degrees F.
- In a lightly oiled skillet over medium heat, sauté kale, tempeh, and corn with taco seasoning for 4-5 minutes.
- Line sheet pan with parchment paper or tin foil. Layer tortilla chips, cheese, black beans, cooked kale, tempeh, and corn. Cook in over until cheese has melted, around 5-10 minutes.
- Add salsa and guacamole, serve, and enjoy!
