Loaded Veggie Nachos

Ingredients
  

  • tortilla chips of choice
  • cheese of choice
  • black beans rinsed and drained
  • kale chopped
  • tempeh chopped
  • corn frozen or fresh
  • taco seasoning
  • salsa
  • guacamole

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a lightly oiled skillet over medium heat, sauté kale, tempeh, and corn with taco seasoning for 4-5 minutes.
  • Line sheet pan with parchment paper or tin foil. Layer tortilla chips, cheese, black beans, cooked kale, tempeh, and corn. Cook in over until cheese has melted, around 5-10 minutes.
  • Add salsa and guacamole, serve, and enjoy!
