Chicken Meatballs

These meatballs are a simple dinner meal that everyone will enjoy! Serve these meatballs on a bed of greens or with pasta.

  • 1 lb ground chicken breast
  • 1 cup baby spinach chopped
  • 2 tsp dried basil
  • 2 tsp dried chives
  • 2 tsp dried parsley
  • 1/4 cup walnuts or oats
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper


  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Grind walnuts or oats in a food processor to create a fine powder
  • In a bowl, combine ground chicken, spinach, fresh herbs, ground walnut or oat powder, salt and pepper.
  • Form the meatballs into golf ball sized balls and place on baking sheet.
  • Bake for 15-20 minutes or until golden brown.
