Chicken Meatballs
These meatballs are a simple dinner meal that everyone will enjoy! Serve these meatballs on a bed of greens or with pasta.

Ingredients
- 1 lb ground chicken breast
- 1 cup baby spinach chopped
- 2 tsp dried basil
- 2 tsp dried chives
- 2 tsp dried parsley
- 1/4 cup walnuts or oats
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Grind walnuts or oats in a food processor to create a fine powder
- In a bowl, combine ground chicken, spinach, fresh herbs, ground walnut or oat powder, salt and pepper.
- Form the meatballs into golf ball sized balls and place on baking sheet.
- Bake for 15-20 minutes or until golden brown.
