Blackberry Chocolate Chip Muffins

These muffins are sweet and tart combining flavors from blackberries and chocolate to form a delicious pastry. They provide nutrients such as healthy fats and fiber as well as a sweet tooth satisfaction. You can enjoy these for an on-the-go breakfast or a quick filling snack!

Ingredients
  

  • 1/2 cup unsweetened applesauce
  • 1/4 cup flaxseed meal
  • 2/3 cup coconut oil
  • 6 eggs
  • 2/3 cup pure maple syrup
  • 1 tbsp vanilla extract
  • 2/3 cup flour
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1/2 cup chocolate chip
  • 1 cup blackberries
  • oil spray

Instructions
 

  • Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners and spray oil on the papers.
  • In a large bowl, mix applesauce and flaxseed meal. Let mixture sit for at least 20 minutes.
  • Add to applesauce mixture coconut oil, eggs, maple syrup, and vanilla extract.
  • In a separate bowl, combine flour, baking powder, and salt.
  • Gently combine dry ingredients with applesauce mixture, continuously stirring until everything is evenly incorporated. Don't over stir. Let the mixture sit for 3-5 minutes to thicken.
  • Fold in the chocolate chips and blackberries.
  • Spoon the batter into the prepared muffin tin and bake for about 30 minutes. Let cool for 15 minutes before serving.

Notes

Option to make these muffins gluten free by using coconut flour or almond flour.
