Almond Butter Brownies

These vegan almond butter brownies are the perfect recipe to satisfy your sweet tooth craving! They are full of ingredients you can find right in your pantry and packed with fiber to keep you full and satiated.

  • 1/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup granulated sugar
  • 1 cup almond butter
  • 8 oz sweet potato (or 3/4 cup sweet potato puree)
  • 1/4 cup honey
  • 3 oz chocolate chips


  • To make sweet potato puree: peel one 8oz sweet potato, cut into 2 in pieces.
  • Cook sweet potato in a steamer basket or steam in the microwave. Steam sweet potato until tender, then mash.
  • Preheat oven to 325°F. Line a 8 in square baking pan with parchment paper.
  • In a medium bowl, sift together flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, combine sugar, almond butter, sweet potato puree, honey, and vanilla.
  • Slowly stir dry ingredients into wet ingredients. Add in chocolate to combine. Mix until ingredients are fully combined.
  • Pour mixture into prepared baking dish and evenly spread mixture.
  • Bake 30-35 minutes or until top is puffed and appears dry. Cool in pan.


Option to make these muffins gluten free by using coconut flour or almond flour.
